● 1 tablespoon oil (using olive oil or any other neutral oil).
● ⅔ cup (100 g) onion, chopped
● Medium 2 celery, 100 g of chopped into small cubes;
● 3 garlic cloves, minced
● ½ tablespoon onion powder
● ¾ teaspoon sea salt
● ½ teaspoon caraway seeds
● ½ teaspoon ground cumin
● ½ teaspoon dried thyme
● ½ teaspoon smoked paprika
● ⅓ teaspoon red pepper flakes
● Black pepper, to taste
● 1 tablespoon soy sauce, Catalogue Tamari, or Nutritional yeast.
● 1 tablespoon balsamic vinegar
● 2 (15 oz) cans of black beans or kidney beans (about 15 dry ounces when drained and rinsed)
● Some ½ cup of walnuts or 60 grams, chopped (or use sunflower seeds for a nut free option).
● 500 g rolls of oats (You can use instant oats)
● It also contains 2 tablespoons (60 g) tomato paste.

Instructions
1: Prepare the Potatoes:
Put the peeled potatoes in a pot with salt added water and let it boil. Let it cook for approximately 10-12 minutes depending on the softness of potatoes. Drain and set aside.
2: Fry the Vegetables:
- In a wide bottomed pan, heat the oil on medium flame so that it sputters lightly. Fry the chopped onion and celery until the onions are tender and golden brown, the celery should be soft, for about 5-7 minutes.
- Next step, blend in the minced garlic, onion powder, sea salt, caraway seeds, ground cumin, dried thyme, smoked paprika, red pepper flakes, and black pepper. Stir fry for 1-2 min more and the spices turn aromatic.
3: Prepare the Bean Mixture:
- In a large bowl put the black beans that have been washed and drained, and the boiled potatoes. Stir them until chunky but mostly paste like using a potato masher or a fork.
4: Combine the Ingredients:
- Include the sautéed vegetables, chopped walnuts or sunflower seeds, oats, soy sauce, balsamic vinegar, and tomato paste to the mashed beans and potatoes.
- Stir until everything is more or less incorporated. It should be thick and must be able to be shaped.
- If it’s too oniony, add more tomato paste or some water, depending on what you fancy.
5: Shape the Meatloaf:
● Heat the oven to 375°F (190°C) approximately 375 F which is equivalent to 1900 C.
● Place parchment paper in a loaf pan to ensure that you have some hanging on the sides of the pan for use when trying to pull out the baked final loaf.
● Take the dough and create a loaf shape before laying it into the prepared loaf pan and using a spatula put it evenly on top.
6: Make the Tomato Glaze:
● In a small bowl combine Ketchup (or paste of tomatoes) maple syrup, balsamic vinegar, and soy sauce.
7: Bake:
● Bake the meatloaf in the preheated oven for 35-40 minutes, or until the top is golden and firm to the touch.
● Allow the meatloaf to rest on the pan for around ten minutes then you can dust the parchment paper in and ease the meatloaf out of the pan. Cut and serve with gravy, vegan where necessary.
8: Make the Gravy (Optional)
● If you’d like to make a quick vegan gravy, simply mix 2 tablespoons of flour with 2 tablespoons of oil in a small pot over medium heat.
- Slowly whisk in 1 cup of vegetable broth and 1 tablespoon of soy sauce. Cook, stirring frequently, until thickened.
